I love Mexican food, but it can be unhealthy made with full fat cheeses, fried tortillas, and fatty ground beef. A much better alternative is an easy to make a healthy Mexican chicken recipe, which is versatile and can be prepared to your tastes.
The main ingredients are chicken breasts, taco seasoning, a can of chicken broth, and a jar of salsa- whichever type you like best. You can layer those four ingredients in the crock pot before you leave for work in the morning, set it to low, and when you come home you’ll be greeted by an awesome aroma that will make you want to eat dinner right away.
I usually pull out the breasts and pour a cup or two of the broth into a gravy boat to use over top of the chicken. Then, I add a cup or two of instant brown rice to the crock-pot and turn it to high. You can also add a can of sweet corn or black beans at this point, and let it cook for about 20 minutes or so, until the rice is the consistency you like.
Serve the breasts whole or shredded- your preference, with the salsa broth mixture to top. You can also top the chicken with shredded cheddar cheese and low fat sour cream for an authentic, but healthy Mexican meal.
